We took two road trips recently from Laramie, to Colorado Springs and Dallas. The Outback handled the crosswinds in the Rocky Mountain region well. We got good mileage on the highway, averaged about 30 mpg. During some stretches of the road, the mileage was higher, close to 35 mpg.
The enjoyable part of the drive to Dallas was passing through Raton pass in Mew Mexico. Here is a Google Maps map of our route:
I prefer this route than the routes through Kansas or Nebraska because it is shorter and is not 100% interstate driving. We couldn't take pictures of the Raton pass but here is a picture from Google Street View:
